Pork Chop Casserole

Ingredients

4 bone in (1 inch thick) pork chops
1 pound sweet potatoes, peeled
1 medium onion, sliced
½ tsp sweet smoked paprika
2 tbsp chopped fresh parsley or 1 ½ tsp dried parsley
salt, black pepper to taste

Directions

1. Preheat oven to 400 F.

2. Slice sweet potato into ¼” thick slices.

3. Arrange the potato slices in a baking dish. Season with salt and black pepper to taste. Add onion and smoked paprika and gently toss. Sprinkle 1 tablespoon of chopped fresh parsley and drizzle with 2 tablespoon of water.

4. Place pork chops on top, cover with foil and cook for 40 minutes.

5. Remove the foil and cook for 30 minutes more, turning pork chops halfway through.

6. Remove from the oven, sprinkle with remaining parsley, adjust taste with more salt and black pepper if necessary and serve.
