FAQs

How to make chewy vs crunchy cookies? ›

Use a higher ratio of white to brown sugar

While brown sugar keeps your cookies moist and soft, white sugar and corn syrup will help your cookies spread and crisp in the oven. Using more white sugar in your cookies will result in a crispier end product.

What is lemon extract made of? ›

Lemon extract is a lemon-flavored liquid made by letting the lemon peels soak in alcohol. Yup, that's it.

What is the secret to making cookies soft and chewy? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

What makes cookies chewy and not hard? ›

Different types of sugars affect the texture because they absorb different amounts of water. Remember moisture is the key! White sugar creates crispier cookies and brown sugar creates chewier cookies.

Can I use fresh lemon juice instead of lemon extract? ›

No matter what you're making, plan on using about 2 tablespoons citrus juice for every 1 teaspoon of lemon extract called for in the recipe.

Can I use lemon juice instead of lemon zest? ›

Lemon juice carries the same flavor as lemon zest, but it's more acidic, so you might want to add a pinch of sugar to balance out the tartness. That said, the lemon flavor is not as concentrated as lemon zest, so you'll want to keep this formula handy: 1 teaspoon of lemon zest = 2 tablespoons of lemon juice.

Is lemon extract stronger than lemon oil? ›

Lemon oil is not lemon-infused oil, but rather highly aromatic oil that is pressed from lemon rinds; as such, it is used in recipes to replace lemon zest (and not juice). Lemon oil is much more potent than lemon extract, which is lemon oil diluted in alcohol.

How do you get cookies to be chewy? ›

Double Your Yolks Most cookie recipes call for at least one egg. You can try omitting the white of each egg, which tends to dry out when baked, and replacing it with an additional yolk. Plus, egg yolks have more fat than egg whites, which helps to keep your cookies moist and chewy.

What makes a cookie soft vs crispy? ›

Butter contributes milk solids and water to a cookie, both of which soften it. Brown sugar contributes molasses – again, a softener. Using lower-moisture sugar (granulated) and fat (vegetable shortening), plus a longer, slower bake than normal, produces light, crunchy cookies.

How to change the texture of cookies? ›

Add more sugar. Sugar becomes fluid in the oven and helps cookies spread, producing an almost candy-like texture.

What keeps cookies chewy? ›

The key to keeping cookies fresh and soft is to seal them in an airtight container, like a resealable freezer bag. And here's a nifty little trick: add a piece of bread to the bag. You might think that the bread trick works because the cookies absorb moisture from the bread.
