How to make the Kardashian viral Salad - Copycat La Scala Salad -Today we have a viral recipe for the famous La Scala Salad recipe which is a really simple chopped recipe that requires very little work to put together. You only need 5 minutes to make it! This is yet another copycat recipe that is enjoyed by the Kardashains..apparently. La Scala Salad

If you are a fan of reality TV and the Kardashians and regularly see them enjoying big bowls of leafy goodness as well as that Portofino wedding, you will love this Khloe Kardashian Salad/Health Nut Salad.

I am yet to come across the most famous Kardashian sisters salad - The Kim Kardashian salad or indeed a salad recipe enjoyed by Momager Kris Jenner!

La Scala is a famous Beverly Hills restaurant. This California restaurant has become well known for it’s chopped salad.

La Scala is owned by Jean Leon, who was born in Spain's Bayonne Basque Country. He migrated to the United States in the 50's and opened his own restaurant La Scala in1956.

The salad is packed full of flavour from chickpeas, lettuce, salami and a delicious mustard dressing.

Luckily for us, the restauranteur shared his popular salad recipe via the LA Times.

I sometimes pan roast the chickpeas (or frizzle as Alison Roman would say) which adds loads of texture and flavour. It is a variation that I would whole heartedly recommend. I have added details in the Variations section below.

Ingredients in the famous La Scala chopped Salad

This famous salad recipe is made with simple ingredients. Here is what you will need:

Crunchy Salad

Head of Iceberg Lettuce and Romaine Lettuce - or any other leafy greens

Chickpeas - Jarred or Tinned. Aka Garbanzo Beans.

Italian Salami - Or a similar cold meat. I use a Halal Turkey Salami.

Mozzarella Cheese - Or Burrata

Tangy Dressing

Extra Virgin Olive Oil - A good quality robust Oil.

Red Wine Vinegar - You can use White wine Vinegar instead.

Dry Mustard Powder - or Dijon Mustard. If using Dijon Mustard, taste as you go. Add 1/2 tsp at a time. It can be overpowering.

Pecorino - Or Parmesan Cheese.

Salt

Black Pepper

Chop Lettuce.Add both types of lettuce, chickpeas, salami, and mozzarella to a large bowl.

Make the dressing. This is the exact dressing that was shared by La Scala.

Combine Olive Oil, red wine vinegar, mustard, salt, and black pepper in a small bowl and whisk together till combined. Taste and adjust seasoning. Stir in some of the Cheese.

Pour the dressing over the salad.

Toss together to combine.

Garnish with extra Pecorino Romano or Parmesan Cheese and serve.

Variations

Veg

Add other vegetables such as red onion, bell pepper, fresh cherry tomatoes, Sun-Dried Tomatoes or Peppers or even Olives.

Spice

Add some Spice to the dressing such as pinch of Chilli Flakes or Smoked Paprika.

Herbs

Add some Herbs to the dressing such as dry Parsley, Thyme or Oregano.

Nuts and Seeds

Serve with a sprinkling of Nuts such as chopped Walnuts or Seeds such as Sunflower Seeds.

Beans

Add Beans to the recipes such as White Beans or Black Beans to make it more substantial.

Cooked Chickpeas

I know that this Salad is meant to be a cold chopped salad but I’ve tried it this way and it is so good!

Simply heat 50 ml Olive Oil in a pan over medium-high heat.

Add the chickpeas, 1 clove sliced Garlic, a pinch of Smoked Paprika, a pinch of Cumin Powder and a sprinkling of Red Chilli Flakes. Season with Salt and Pepper and cook until golden brown. This will take 10 - 15 minutes.

You can take a short cut by cooking them in Smoky or Rose Harissa instead.

How to serve La Scala Salad

This recipe is substantial enough to be served alone but it is also great served with:

Cooked Turkey Breast

Storeleftovers in an airtight container in the fridge for up to 1-2 days.

How to make ahead

To make it in advance, chop the salad leaves and salami and store separately in small airtight containers. Makethe dressing in advance and store in a separate container. Store for up to 3 days.

I wouldn’t recommend chopping or shredding the Mozzarella in advance.

Salad

  • 1 head Romaine Lettuce
