Our Best Keto Slow Cooker Pork Loin is one of the most delicious ways to cook pork. The pork loin is coated in a spice mixture of paprika, salt, and granulated garlic. The pork is seared in a pan before being placed in the bottom of a slow cooker, and a sauce is made from butter, grated garlic cloves, and apple cider vinegar. We love the tartness that the apple cider vinegar adds to the meat and the gravy. Once the meat is cooked, the gravy is thickened and poured over the thinly cut pork. This dish would be amazing served with a whole host of Keto and Low Carb side dishes.
Can you make Keto recipes in the slow cooker?
Yes! There are many recipes that can be adapted to be Keto or Low Carb that are made in the slow cooker. Slow cooking a pork loin is a good example of one recipe. The slow-cooking method does a great job of not overdrying the pork, and the juice created in the pot makes for a delicious gravy!
Can I substitute the arrowroot starch?
Arrowroot starch is generally accepted on the Keto diet in small quantities as is used in this recipe. It is used as a thickener and is never consumed in large quantities. However, if you want to substitute the arrowroot starch with xanthan gum you can. If doing so, combine the juice from the bottom of the slow cooker in the saucepan first before adding the xanthan gum. Start by adding 1/4 tsp and cook until the mixture is simmering and thickened. Test the viscosity of the sauce. Remember it will continue to thicken as it cools, so don't add too much. A little xanthan goes a long way!
How is the gravy made for this dish?
The juice from pork that is created during the slow cooking process, and the butter/garlic mixture is used to make the gravy. Once the time has passed, and the pork has cooked for four hours, the meat is removed to a cutting board. Arrowroot powder is added to the remaining juices in a small saucepan and simmered until thickened. It is a fast and easy way to turn a delicious meal into one of the best.

Step 1
Combine the paprika, kosher salt, and granulated garlic in a small bowl. Pat the pork loin dry with paper towels. Dust the pork loin all over with the spice mixture. Make sure the spices are evenly distributed.
Step 2
Preheat a medium-sized skillet over medium-high heat until hot. Once hot, add the avocado oil. Swirl the pan to coat it. Add the pork loin and let it sear on the first side for several minutes. Turn the heat down to medium if it is cooking too fast and not browning nicely. Feel free to keep the pork over medium heat until a nice brown crust forms. Flip the pork and repeat on the other side. Once the pork is seared, sit it aside.
Step 3
Add in the butter and grated garlic cloves. Use a wooden spoon to scrape up the browned bits from the bottom of the pan. Place the pork loin in the bottom of a slow cooker.
Step 4
Pour the butter mixture over the pork. Add the apple cider vinegar to the liquid at the bottom of the pot. Place the lid on the slow cooker and set the pot on high for 4 hours.
Step 5
After the 4 hours have passed, remove the pork to a cutting board to cool slightly before cutting. Pour the liquid from the pot into a small saucepan. Add in the arrowroot powder and whisk quickly to incorporate it.

Place the pot over medium heat and allow it to simmer until thickened. Slice the pork and then pour some of the gravy over it. Serve immediately.
