Sour Cream Banana Bread

Ingredients

  • 1 tablespoon cinnamon sugar
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 ½ cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon table salt
  • 1 cup mashed ripe banana (2-3 bananas, depending on size)
  • ½ cup sour cream

Instructions

  1. Preheat oven to 350 degrees. Spray a 9×5 pan with baking spray and sprinkle with cinnamon sugar. Set aside.
  2. Beat the butter and sugar until very creamy. Add the eggs and vanilla and beat again.
  3. Sift together the flour, baking soda, and salt. Slowly add to the butter mixture while the mixer is running. Do not overbeat.
  4. Stir in the bananas and sour cream by hand until incorporated. Pour into prepared pan.

    I can't count how many banana bread recipes I've tried over the last year. They were never quite right, not moist enough, flavor bland, didn't rise enough, etc. My son tested the first slice of your recipe and said, Do not lose this recipe!
